My Creamy Spaghetti Pasta Carbonara

It’s been a long time ever since my last post about food.

But today, I am sharing with you my Creamy Carbonara recipe that I prepared last weekend. I know most of the recipes I shared before are baking recipes, but.. Hey! It’s fun to try other things, right?

I had a long weekend because of the holiday here; we stayed at my sister’s place. We used our long weekend to relax and just have fun.

Saturday, my sister asked me to cook Carbonara for lunch. I agreed right away because I looooove pasta!

Just a warning, Filipinos have their own way on how to cook carbonara. I wouldn’t say that we started this method, but this version is definitely not the traditional version. So, please understand.

Here we go.. My Creamy Spaghetti Pasta Carbonara recipe!

Ingredients:

  • 2 tsp of ground pepper
  • 5 cloves of garlic
  • 500 ml All Purpose Cream
  • 250 ml evaporated milk
  • 250 g Ham (sliced into box shape)
  • 500 g Tuna (Flakes and Oil)
  • 1 tsp of iodised salt
  • 800 g spaghetti pasta
  • 400 g mushroom (sliced)
  • 200 g cheddar cheese

Directions:

1. Cook tuna in the pan (I used it’s oil to cook it), let it stay there for at least 15 mins before adding the ham. Once the ham and tuna are ready, set it aside. Do not throw the oil.

2. In the same pan, cook the garlic, then add the mushroom. Wait for at least 5 mins before pouring the all purpose cream and evaporated milk into the mixture.

3. Add salt and pepper to taste. Mix it for at least 15 mins.

4. Add the ham and tuna in the mixture, then add the cheddar cheese. Let it simmer. Then set aside.

5. For the pasta, just follow the direction written on the packaging.

You can either mix the pasta and the sauce right away or just put both on its separate plates.

There you go. That is my Creamy Carbonara recipe!

It was so creamy and tastes so good! I have a mild lactose intolerance and with the amount of lactose I consumed I you can say that I went to the bathroom for so many times that day. I Love Pancakes! (And I Know You Do Too..)

This week I made 3 flavors of pancake that I’m pretty sure everyone can make at home.

What can I say? I really love pancakes, they’re so easy to make yet so delicious! I hope that you can give this a try! Let’s do this!

1. Mango Pancakes with Mango Syrup

Fun fact! Philippine’s National Fruit is mango! You can find mangoes everywhere in our country! We even used to have a really big mango tree and every summer we would harvest 3 drums of mangoes! Yep… it’s a lot. Anyways, this pancakes was a hit! It’s so fluffy but not mushy. I don’t know why I didn’t do this before because everyone loved it! And I’m sure you will too once you try it. 🙂

2. Avocado Pancakes with Muesli Toppings

This one is my favorite so far because I will always love avocado, I always wanted to have an Avocado Tree.. ugh.I love avocados because for me it doesn’t really have a strong taste, and I think that;s an advantage because you can just decide how you want your avocados to taste like.. from smoothies to Guacamole, name it! I actually ended up making this pancakes because my sister bought 5 kilos of it, and it’s really delicious! My personal advice would be if you wanna try this please do not pour all the water in the mixture, because the amount of water you will use depends on how ripe your avocado is.

3. Sweet Potato Pancake with Honey

I used to hate sweet potatoes, you know why? Because my parents would make us eat it everyday! And I always fart a lot after eating it. But more than a month ago I stopped eating rice, and now I eat sweet potatoes instead. I thought that maybe I can use it for pancakes too and thats what I did. I’m really happy with the result! You actually don’t need to add flour because the content of sweet potatoes is enough to make it a solid pancake!

Carrot Cake For Your Soul. ❤️

As a beginner, I’m always cautious on recipes I want to try because I wanna avoid wasting my ingredients so I always choose easy recipes for the meantime.

Well, last week I challenged myself to make something a little more complicated than a simple Chocolate Cake (and given the fact that we ran out of cocoa and chocolates lol!) I checked our food storage and realized that we have plenty of carrots!

So I decided I should try to make Carrot Cake this time and that’s how I ended up with this cake.

I got this recipe from Buzzfeed and for me this recipe is actually pretty easy. Of course, it’s more time consuming than a regular Chocolate Cake but definitely worth a try. Promise!

What I actually love about this cake is the fact that it’s super moist because of the extra Pineapple that is included in the recipe, which by the way kinda surprised me because I’ve watched a lot of videos about Carrot Cake and not one mentioned using Pineapple except this! And also the smell of Cinnamon! I don’t know why but I suddenly fell inlove with the smell of Cinnamon ever since I started engaging it with my baking.

Finally, for me the thing that makes Carrot Cake special is that it’s made of carrots! Just like that.. I haven’t really heard any cake that use vegetable as the main ingredient other than this one and I find that amazing..

I’m looking forward on making this again in the future, but that might take awhile because my boyfriend doesn’t like Carrot Cake and I can’t think of any person that I’d want to taste my food other than my family and my boyfriend. I’m just not confident enough I guess..

But, who knows.. Lol!

Guilt-Free Cinnamon Rolls That You Must Try

The weather is so nice today, it’s cold and raining outside perfect time for a tea and thought it’s also perfect time to write another blog.

Recently I’ve made a decision to watch my calorie intake, I sometimes binge eating because of the stress caused by the quarantine and the result is I don’t physically and mentally feel well but as you may notice I’m starting to fall inlove with baking and even though breads are not really the healthiest food out there I will not let that fact prevent me from enjoying foods that I like.

So, I’ve always wanted to try Cinnamon Rolls but when ECQ started the grocery store ran out of stocks of ground cinnamon but few days ago they already have stocks of it! Finally!

I tried to make it as low calorie as possible but still has the delicious taste of the original Cinnamon Roll!

And I’m so happy with the result as it turned out great! It taste really good but you can also sense that its a Healthy cinnamon rolls, not too sweet just enough to taste and make you want more!

And here’s the recipe of my own version of Cinnamon Rolls

Guilt-Free Cinnamon Rolls

17 servings/ 87 Calories per piece.

Dough:

500 grams of All Purpose Flour

1 teaspoon of Baking Powder

1/2 teaspoon of Baking Soda

1 tablespoon of melted margarine

1 tablespoon of powdered milk

250 ml of water

2 tablespoon of Muscovado Sugar

1 teaspoon of instant yeast

Pinch of Salt

Filling:

2 tablespoon of ground cinnamon

1 tablespoon of nutmeg

3 tablespoon of Muscovado Sugar

Glaze:

1 tablespoon Honey

1. Preheat your oven at 350° Celsius. Stir in the powdered milk into the water and put it on the stove, heat it just enough that you can still put your finger in the mixture because we do not want it to be too hot, it will kill the yeast.

2. Mix the melted butter first and then yeast into the milk mixture, leave it for 10 minutes or until it start to form bubbles.

3. In a bowl, sift the flour, baking powder, baking soda,salt, sugar. Then pour in the milk. Mix everything together, do not overmix. Leave it for 1 hr to rise, cover it with a cloth or plastic.

4. While waiting for the dough to rise start making your filling, just mix the ground cinnamon, nutmeg and sugar all together then add 2 tablespoon of water or milk whatever you desire.

4. After one hour, remove the dough from the bowl and start kneading for 30 mins.

5. Get a rolling pin and roll the dough into a rectangular shape.

6. Get your filling and start to spread it in the dough, make sure that all areas has fillings.

7. Then carefully roll the dough into a log form, once finished use a thin thread or floss.

8. Gently place the cinnamon in the pan and put it in the oven. Bake for atleast 25-30 mins or until the bread turns brown

9. Once baked, use honey for glaze.

There you go!!! You can now have your guilt-free Cinnamon Rolls!! It’s only 84 calories per serving! I added the recipe on my FitnessPal account, if you have an account you can check it out here!

And YES, I’m fully aware that honey is not what we normally use to glaze Cinnamon Rolls but I’m trying to make it as healthy as possible and “fun fact!” I have mild lactose intolerance, so I decided not to add any more dairy because it might upset my stomach but believe me or not it tastes greaaaaat!!! It’s so easy and healthy!! I couldn’t wait to try it again!!

My New Favorite: Babka Bread

Hi! How are you?! I hope you’re doing well! Its been a week since my last post! I know, I know.. you guys missed me! LOL!

Anyways, are you familiar with this type of bread called Babka? I tried it for the first time yesterday and I just loved it!

If you will search what Babka is on Wikipedia it will describe it like this:

“Babka is a sweet braided bread or cake of Ashkenazi Jewish origin, popular in Israel, in American Jewish cuisine, and elsewhere in the Jewish diaspora.”

If you’ve been reading my blogs, you’ll know that I just started learning how to bake. Baking helps me to keep my mind occupied especially now.

So far I’ve tried some common types of bread like milk bread, cinnamon rolls etc.. But this time I wanted to challenge myself and just in time because I just found out about this bread called Babka. The ingredients is actually pretty basic nothing really special or uncommon, believe me!

The process was actually the one that really put me off at first because it’s kinda long but I’m so happy that I remained patient with this one because it is definitely so worth it! The long process helped the bread taste really good.

For me the most difficult part of making this bread is when I had to roll the dough with fillings and cut it in half horizontally because the dough is soft and I actually put too much chocolate! Haha!

My family tried it and they told me its the best bread I baked so far! Made me feel happy inside. 🙂

My Super Basic Chocolate Chip Cookies

I JUST DID THIS AWHILE AGO, BUT I’M SUPER EXCITED TO WRITE ABOUT IT!

I KNOW.. Chocolate Chip Cookies is super common but I still wanna talk about it as it’s my first time making it.

It seems like learning how to bake a Chocolate Chip Cookie is a must for everyone not only because its super easy but it’s also a popular comfort food. I’ve watched a lot of videos about making a perfect Chocolate Chip Cookies and it really made me wanna bake my own version someday.

That day was today!

We went outside earlier to buy groceries and I took that as a chance to buy ingredients for my cookies.

We got home and I prepared all the ingredients right away (after cleaning myself of course! safety first!)

Here’s my Super Basic Chocolate Chip Cookies Recipe:

  • 400 g of flour
  • 100 g of brown sugar
  • 100 g of white sugar
  • 70 g of butter/margarine
  • 1 and 1/2 teaspoon of baking soda
  • 1 teaspoon of cornstrach
  • 1 teaspoon of iodized salt
  • 150 grams of chocolate chips
  • 2 eggs

Steps:

  1. Melt butter then add brown and white sugar mix until it reaches a paste like appearance
  2. Add 1 egg in the mixture then mix it, add another egg again.
  3. Add the dry ingredients, mix until well-combined.
  4. Place the mixture in the fridge for atleast 1 hour.
  5. After one hour and you wanna bake it already, preheat oven for 350 degrees F.
  6. Form the dough into a ball shape. It depends on you how big you want your cookies to be. Mine was only 2 tablespoon. Place it in a baking pan with just enough spaces from each other.
  7. Bake it for 12 mins. Do not overbake. Your cookie will have a soft texture once you touch it and that’s OKAY, that’s how it should be.
  8. Let it cool for atleast 5 minutes and enjoy!! 🙂

I used cornstarch because I read somewhere that it will help the cookie to have a gooey/chewy texture. I also didn’t use vanilla if you noticed because it is not available at the supermartket. 😦

BTW, I’m using grams because it really annoys me whenever the recipe is using cup measurement, I mean there’s different types of cups! right?! JOKE! I’m also more comfortable with this.

I also wanna say that the ingredients that I used on making this cookies is not the best quality because we have a very limited resources.

But you know what? It’s okay!

It actually turned out soooooo goooooood!! More than what I expected TBH! I’m not saying this because it’s my cookie (but maybe..) but it was really gooood. So good that it’s enough-to-share-with-your-family-and-not-get-nervous-that-they-might-not-like-it. Something like that! HAHA!

It smelled so delicious. Its golden brown. Its chewy inside. Just everything I want for my cookies. Definitely worth it!

ALERT!! I’m not an expert, and this recipe is definitely not the best but enough for me. I will try other recipes and see how I can improve my version. 🙂

My epic fail Soufflé Pancake….

This is about my first try of trying things again and this time its Soufflé Pancake.

If you personally know me, I am a huge fan of pancakes! I’ll have pancakes everyday whatever mood I’m on. When Souffle pancake started trending before I got really curious and wanted to try it but the problem was we don’t have electric mixer which is something that you’ll need to make it.

Then Dalgona coffee became a trend too and I saw a lot of people who tried making it without electric mixer, so i thought maybe I can do that with Souffle Pancake too..

I looked for videos on YouTube that actually tried making Soufflé Pancake without electric mixer and I actually did find one, so I tried to follow it step by step the only problem was the pan that we have is not a non-stick pan..

And the mixing using my hand… ugh..

Well, it took me almost 30 mins just to reach the fluffy kind mixture you need for the pancake. My hands really felt numb after that. 😦

And because I used a not non-stick pan the result was…. the pancake got burned and it lost the air inside.. whatever you call that…

Anyways.. the end result turned out like this… haha!

To be honest, I expected it to look more terrible than that so I guess it was still kinda a success? Hahahaha! But even though it looked awful the taste was actually pretty good, it’s not too sweet and it’s still fluffy inside.

10/10 would definitely try again! But I hope next time I’ll be able to try it with an electric mixer. 🙂

My first successful Chocolate Cake (yay!)

Baking has always been something that I really want to try but I just don’t have time for it because I’m always occupied by a lot of things. But COVID-19 happened, our government decided to tighten up everything and started ECQ (Enhanced Community Quarantine) , we were asked to stay at home for our safety because of it’s continuous spread this gave me lots of time extra time to do stuff that I’ve always wanted to try..

Baking is one of them.

I started learning how to bake recently (like few weeks ago lol) , and of course the first cake that I tried is Chocolate Cake. I got the recipe from a Youtube Channel called Bon Appetit. This one is a basic cake which is perfect for beginners. Its so easy like a piece of cake (pun intended!)

I tried my best to follow the recipe step by step and to get the same ingredients but due to ECQ we have a very limited supplies so I had to find ways to make my Chocolate Cake work.

For the milk, we didnt have any fresh milk so I used evaporated milk instead. I didn’t have enough cocoa so I had to find a way to enhance the color and make it more chocolate-y, thats why I decided to use dark brown sugar instead and it actually help with the cake’s taste and color. As for the frosting, I didn’t have enough ingredients to make it so I decided to put oats on top as a garnish. This took 40 mins for the cake to completely finish. Photos below is the final product!

I highly recommend this recipe because its so easy to make but the outcome was actually really good. Its something that you can make if you dont have so much time.
